School of Preserving


Forage Byron Bay School of Preserving offers seasonal cooking classes, preserving classes, foraging workshops, and cheese making classes.

Come and join us on our Forage Byron Bay farm for an intimate and informative day of food based fun. New and old techniques will be taught by a seasoned cook and preserver to make the most of seasonal produce, including in-season Native Australian ingredients. Group size is limited to give you the opportunity to learn new skills required to re-produce recipes at home. Group bookings welcomed.

Forage Byron Bay Preserving Classes - coming soon  

Forage Byron Bay cooking classes include production of several preserves, pickles or ferments from harvest to jar. These will be based on available seasonal produce grown on the Forage Farm in Myocum, 15 minutes from Byron Bay. Begin the day with harvesting produce from the property, including in season Native Australian produce, followed by an introduction to preserving techniques drawn from many years of preserving experience and experimentation. 

Summer Harvest preserving class

Pickled green tomatoes, green tomato chutney, fermented red tomatoes, green chilli jam, Davidson plum jam, Lilly Pilly jam, passionfruit cordial.

Autumn Harvest preserving class

Pickled pumpkin, ginger marmalade, pickled ginger, ginger cordial, pickled pecans.

Winter Harvest preserving class

Pickled cauliflower, purple cabbage and ginger pickle, sauerkraut, Thai red chilli jam, preserved lemons, lemon chutney, spiced lemon cordial, pickled cumquats.

Spring Harvest preserving class

Pickled cherry tomatoes, sweet chilli sauce, pickled baby carrots.


$120 pp including a jar of each preserve made in the class, recipe cards, and a shared platter lunch (vegetarian) w/ a glass of wine. 

Groups can be catered for, including Hen's (or Buck) parties with small jars of preserves with personalised labels made for wedding favours.

Forage Byron Bay Cooking Classes - coming soon

Come and join me on our beautiful farm just out of Byron Bay for a cooking class. 

Hands on, small groups, relaxed setting with a shared lunch and glass of wine.

Classes will focus on building a balanced dish or menu from locally sourced products and produce from the Forage Byron Bay farm. I am a cook with a lifetime of experience and passion for wholefood vegetarian cooking.

Classes include;

- Vegetarian finger food for catering your own event,

- The dinner party (with Yotam Ottolenghi theme),

- Cooking with Native Australian ingredients,

- Healthy vegetarian food on a budget, 

- Eating a vegetarian wholefood diet for health.

$120 pp, $80pp for 'healthy vegetarian food on a budget'

Groups can be catered for.

Forage Byron Bay foraging workshop - coming soon 

Like the idea of foraging for your own food? 

Come and learn the basics of identifying edible Native Australian plants and edible 'weeds' that grow on the North Coast of NSW.

After a few hours of foraging, we will share a foraged meal and discuss uses and preserving techniques to get the most from our wild food.

$80 pp, half day 


Forage Byron Bay Cheese Making Classes - coming soon 

Come and join me on our beautiful farm just out of Byron Bay for a cheese making class.

Hands on, small groups, relaxed setting with a shared lunch and glass of wine. The goal of this class is to learn a basic set up and process for cheese making that you can use in the home kitchen.
