Forage Byron Bay is passionate about showcasing ingredients that are Native to Australia. There is such an abundance of native edible fruits and plants that offer unique flavour profiles and offer exciting opportunities for use in cooking and preserving. Ever tried a fresh creamy Lemon Aspen? Or a sweet Midyim? Highly recommended. 

Whilst we love to 'forage', it is important to remember that these plants are part of an important ecosystem and wild foraging should respect this. There is a lot of information out there on ethical wild harvest of food, simple things to think about include not taking an excessive amount, and not damaging the bush to access fruit or plants. You also need to be aware that it is illegal to wild harvest some plants (such as Davidson Plum) without a permit. 

Unless otherwise stated, all of the Native Australian ingredients used for these recipes were harvested from our property in Northern NSW. We are ever expanding our range of edible Native Australian plants so that we can continue to use them for classes and preserves, whilst leaving enough for our local wildlife!
